{"id":6896,"date":"2019-03-14T07:48:57","date_gmt":"2019-03-14T11:48:57","guid":{"rendered":"https:\/\/eatrightpa.org\/?p=6896"},"modified":"2021-10-30T03:37:44","modified_gmt":"2021-10-30T03:37:44","slug":"celebrating-st-patricks-day-with-good-irish-food","status":"publish","type":"post","link":"http:\/\/www.eatrightpa.org\/blog\/2019\/03\/14\/celebrating-st-patricks-day-with-good-irish-food\/","title":{"rendered":"Celebrating St. Patrick&#8217;s Day with Good Irish Food"},"content":{"rendered":"<p><strong>Celebrating St. Patrick\u2019s Day with Good Irish Food: Not what you might expect!<\/strong><\/p>\n<p>By Laura Ali, MS, RDN, LDN<\/p>\n<p>My husband and I took a vacation in Ireland last fall.\u00a0 It was a wonderful trip full of beautiful scenery, nail biting country drives and wonderful food.\u00a0 Yes, wonderful, delicious food.\u00a0 I know, Ireland is not known for its culinary delights.\u00a0 Most Americans think of heavy, bland food, but from our first day there we found it to be anything but bland and enjoyed many delicious meals.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-6900 aligncenter\" src=\"http:\/\/dev.eatrightpa.org\/wordpress\/wp-content\/uploads\/2021\/10\/Cliffs-of-Mohr-300x225.jpg\" alt=\"\" width=\"593\" height=\"445\" \/><\/p>\n<p>St. Patrick\u2019s Day is a perfect time to celebrate the rich Irish culinary heritage by indulging in some traditional Irish foods.\u00a0 I\u2019ve asked some of my RD friends for their best St. Patrick\u2019s Day recipes and we\u2019ve lightened them up where we can.\u00a0 These will help you celebrate throughout the weekend and host a fun holiday with a surprisingly delicious spread!<\/p>\n<p><strong>What&#8217;s for Breakfast?<\/strong><\/p>\n<p>Breakfast in Ireland is one meal that everyone takes their time over and enjoys. It is perfectly fine to sit and relax with a cup of coffee or tea and enjoy the meal. From good hearty whole grain breads, like these mini whole-wheat <strong><a href=\"http:\/\/www.onthekitchenshelf.com\/2019\/03\/03\/mini-irish-soda-bread\/\">Irish Soda breads<\/a><\/strong> or a big bowl of Irish oatmeal, along with eggs and sausage, the Irish breakfast is definitely designed to \u201cbreak-the-fast\u201d.\u00a0 But, if you are looking for something a little lighter and healthier, this <strong><a href=\"http:\/\/www.pronutritionconsulting.com\/recipes-smoothies\/3-green-smoothie-with-chia-and-flax\">3 Green Smoothie<\/a><\/strong> from Helen Agresti at ProNutrition Consulting might be just what you are looking for before you head out to watch the parade.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-6899 aligncenter\" src=\"http:\/\/dev.eatrightpa.org\/wordpress\/wp-content\/uploads\/2021\/10\/Mini-Irish-Soda-Breads-copy-300x225.jpg\" alt=\"\" width=\"405\" height=\"304\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Warm Up With Lunch<\/strong><\/p>\n<p>Vegetable soup and cheese sandwiches are typically on the menu in every pub in Ireland and are a great choice after spending the morning seeing the sights. Traditional soups are rather light and cheese sandwiches are the perfect accompaniment.\u00a0 Try one of these delicious soups to warm up after watching the parade and you\u2019ll be ready to head back out for more festivities!<\/p>\n<ul>\n<li>This <a href=\"https:\/\/eatreallivewell.com\/2013\/01\/16\/potato-leek-and-kale-soup\/\">Potato and Leek Soup<\/a> from Kelly Jones adds kale for a nice splash of green and gives it a good antioxidant boost!<\/li>\n<li>If you want to try something lighter, try this twist on a <strong><a href=\"http:\/\/www.pronutritionconsulting.com\/recipes-soups\/vegan-roasted-cauliflower-soup\">Potato Soup<\/a>\u00a0<\/strong>using cauliflower from Helen Agresti, RD.<\/li>\n<\/ul>\n<p><strong><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-6898 aligncenter\" src=\"http:\/\/dev.eatrightpa.org\/wordpress\/wp-content\/uploads\/2021\/10\/Shephard_s-Pie_StPattysDay-1-256x300.jpg\" alt=\"\" width=\"286\" height=\"335\" \/><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Don&#8217;t Forget Dinner<\/strong><\/p>\n<p>Dinner is the heaviest meal and while we were in Ireland we enjoyed a lot of fresh fish along with rich and hearty vegetable beef stews, fried fish and chips, lamb, and potatoes of course!<\/p>\n<ul>\n<li>Corned Beef and Cabbage is one of the more traditional St. Patty\u2019s Day meals, in this country. But if you are like me you never get through that whole head of cabbage!\u00a0 If you don\u2019t know what to do with the extra, <strong><a href=\"https:\/\/teaspoonofspice.com\/easy-ways-to-enjoy-leftover-cabbage\/\">Teaspoon of Spice<\/a> <\/strong>has you covered with these delicious recipes!\u00a0 Not one piece of cabbage will go to waste!<\/li>\n<li><strong><a href=\"https:\/\/eatreallivewell.com\/2017\/03\/10\/st-patricks-day-rainbow-colcannon\/\">Colcannon<\/a> <\/strong>\u2013 try Kelly Jones\u2019 delicious twist on this classic potato and cabbage dish. She\u2019s added a lot of color and made it dairy free as well.<\/li>\n<li>These healthier single serving<strong> <a href=\"https:\/\/heathermangieri.com\/easy-shephards-pie-st-patricks-day\/\">Shepherd\u2019s Pies<\/a><\/strong> from Heather Mangieri would be a delicious way to warm up after watching the St. Patty\u2019s Day parade!<\/li>\n<\/ul>\n<p><strong>Afternoon Tea and some Treats<\/strong> \u2013 Scones were always on the menu with a cup of tea if you needed an afternoon break.
