You are probably stocked up on all your pumpkin puree cans thinking about making pie, muffins, and other sweet treats. But don&#8217;t forget about how delicious pumpkin is as a savory recipe. Pumpkins are full of nutrients including Vitamin A and Beta Carotene. In this savory recipe I&#8217;m adding additional vegetables so it&#8217;s a nutrition powerhouse and completely sugar free (unlike that pumpkin spice latte). The curry paste gives it a light Thai flavor and the coconut milk makes it extra creamy. Give this Thai Pumpkin Soup a try!<\/p>\n<p id=\"zlrecipe-ingredients\" class=\"h-4 strong\"><strong>Ingredients<\/strong><\/p>\n<ul id=\"zlrecipe-ingredients-list\">\n<li id=\"zlrecipe-ingredient-0\" class=\"ingredient\">1 15 oz can pumpkin puree<\/li>\n<li id=\"zlrecipe-ingredient-1\" class=\"ingredient\">1 medium yellow onion<\/li>\n<li id=\"zlrecipe-ingredient-2\" class=\"ingredient\">1 large red pepper<\/li>\n<li id=\"zlrecipe-ingredient-3\" class=\"ingredient\">2 cups vegetable broth<\/li>\n<li id=\"zlrecipe-ingredient-4\" class=\"ingredient\">3 cloves garlic, miced<\/li>\n<li id=\"zlrecipe-ingredient-5\" class=\"ingredient\">1 1\/2 TBSP ginger<\/li>\n<li id=\"zlrecipe-ingredient-6\" class=\"ingredient\">1 TBSP red curry paste<\/li>\n<li id=\"zlrecipe-ingredient-7\" class=\"ingredient\">1\/3 cup lime juice<\/li>\n<li id=\"zlrecipe-ingredient-8\" class=\"ingredient\">1 15 oz can coconut milk<\/li>\n<li id=\"zlrecipe-ingredient-9\" class=\"ingredient\">Cilantro (optional)<\/li>\n<\/ul>\n<p id=\"zlrecipe-instructions\" class=\"h-4 strong\"><strong>Instructions<\/strong><\/p>\n<ol id=\"zlrecipe-instructions-list\" class=\"instructions\">\n<li id=\"zlrecipe-instruction-0\" class=\"instruction\">Chop pepper and onion<\/li>\n<li id=\"zlrecipe-instruction-1\" class=\"instruction\">Add all ingredients except lime juice and coconut milk to slow cooker<\/li>\n<li id=\"zlrecipe-instruction-2\" class=\"instruction\">Cook on low 8-10 hours<\/li>\n<li id=\"zlrecipe-instruction-3\" class=\"instruction\">Add coconut milk and lime juice<\/li>\n<li id=\"zlrecipe-instruction-4\" class=\"instruction\">Puree in blender<\/li>\n<li id=\"zlrecipe-instruction-5\" class=\"instruction\">Serve warm<\/li>\n<li id=\"zlrecipe-instruction-6\" class=\"instruction\">Garnish with cilantro<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>By: Jessica DeGore RD LDN CDE CHWC It&#8217;s the time of year for Pumpkin EVERYTHING!!!
