Bananas are one of the best selling fresh fruit items in the United States and for good reason!<\/span><span style=\"font-weight: 400;\"> National Banana Day is a great time to celebrate this misunderstood fruit that is often touted as being \u201ctoo high in sugar.\u201d\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Bananas are a convenient snack providing 11% of your Daily Value for fiber (which supports heart health), 25% of your Daily Value for Vitamin B-6 (supports energy metabolism), 15% of your Daily Value for Manganese (supports energy metabolism) and 10% of your Daily Value for Calcium, Vitamin C, Biotin, and Copper for 1 medium-sized fruit. They also do not contain any sodium, cholesterol, or fat!<\/span><span style=\"font-weight: 400;\">2,3 <\/span><span style=\"font-weight: 400;\">Bananas can be eaten as-is or added to cereal, pancakes, or smoothies for a boost of natural energy and complex carbohydrates.\u00a0<\/span><\/p>\n<p><b><i>Banana Nut Muffin Recipe<\/i><\/b><\/p>\n<p><i><span style=\"font-weight: 400;\">Plant-based \u2013 Gluten-free \u2013 Vegan<\/span><\/i><\/p>\n<p><b><i>Ingredients<\/i><\/b><\/p>\n<p><span style=\"font-weight: 400;\">-3 medium bananas (mashed)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-\u00bc cup unsweetened applesauce<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-1 teaspoon vanilla extract<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-3 tbsp 100% pure maple syrup<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-\u00bc tsp ground ginger<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-\u00bc tsp ground nutmeg<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-1 tsp allspice<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-Dash salt<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-1 tsp baking powder<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-1 tsp baking soda<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-\u00bc cup ground flaxseed<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-1 cup gluten-free flour blend<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-\u00bd cup almond flour (almond meal)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Optional toppings: dairy-free chocolate chips, walnuts, pecans, almond slivers, or unsweetened coconut flakes<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><b><i>Directions<\/i><\/b><\/p>\n<ol>\n<li><span style=\"font-weight: 400;\"> Preheat the oven to 350\u00b0F. Line a standard muffin tray or grease with cooking spray and set aside.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> In a large bowl, mix together wet ingredients. In a separate bowl, mix together dry ingredients. Add wet ingredients to dry.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Fill muffin cups \u00be\u2019s of the way full. Top with chopped walnuts and dairy-free chocolate chips (if desired).<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Bake for 25 minutes or until a toothpick comes out clean.
