I feel like oatmeal is the best option this time of year but I wanted to switch it up with something savory. This bread pudding adds veggies to a meal that is generally lacking them and has a good carb and protein balance between the bread and the eggs. I used multi-grain bread but you could use whatever type of bread you prefer (and really any cheese\/veggie combo that strikes your fancy).<\/p>\n<p>This would be a great dish to make on Sunday nights for meal prep to eat for breakfast throughout the week as well as for entertaining a group or any special occasion\/holiday. Savory bread pudding is a little unusual and less traditional but I guarantee your guests will be impressed with it. I actually ended up eating for breakfast and lunch some days (partly because a 13\u00d79 casserole dish is a large serving #foodbloggerproblems)<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-8696 aligncenter\" src=\"http:\/\/dev.eatrightpa.org\/wordpress\/wp-content\/uploads\/2021\/10\/savorybreadpudding-200x300.jpg\" alt=\"\" width=\"219\" height=\"329\" \/><\/p>\n<div id=\"zlrecipe-container-23\" class=\"zlrecipe-container-border\">\n<div id=\"zlrecipe-container\" class=\"serif zlrecipe\">\n<div id=\"zlrecipe-innerdiv\">\n<p id=\"zlrecipe-ingredients\" class=\"h-4 strong\"><strong>Ingredients<\/strong><\/p>\n<ul id=\"zlrecipe-ingredients-list\">\n<li id=\"zlrecipe-ingredient-0\" class=\"ingredient\">1 small loaf fresh bread (I used multigrain)<\/li>\n<li id=\"zlrecipe-ingredient-1\" class=\"ingredient\">1 TBSP olive oil<\/li>\n<li id=\"zlrecipe-ingredient-2\" class=\"ingredient\">1 medium yellow onion, diced<\/li>\n<li id=\"zlrecipe-ingredient-3\" class=\"ingredient\">3 cloves garlic, diced<\/li>\n<li id=\"zlrecipe-ingredient-4\" class=\"ingredient\">10z frozen spinach<\/li>\n<li id=\"zlrecipe-ingredient-5\" class=\"ingredient\">10 oz mushrooms, diced<\/li>\n<li id=\"zlrecipe-ingredient-6\" class=\"ingredient\">2 TBSP balsamic vinegar<\/li>\n<li id=\"zlrecipe-ingredient-7\" class=\"ingredient\">2 TBSP fresh thyme<\/li>\n<li id=\"zlrecipe-ingredient-8\" class=\"ingredient\">4 eggs<\/li>\n<li id=\"zlrecipe-ingredient-9\" class=\"ingredient\">3 cups milk<\/li>\n<li id=\"zlrecipe-ingredient-10\" class=\"ingredient\">5 oz goat cheese, crumbled<\/li>\n<\/ul>\n<p id=\"zlrecipe-instructions\" class=\"h-4 strong\"><strong>Instructions<\/strong><\/p>\n<ol id=\"zlrecipe-instructions-list\" class=\"instructions\">\n<li id=\"zlrecipe-instruction-0\" class=\"instruction\">Cube bread and stale overnight<\/li>\n<li id=\"zlrecipe-instruction-1\" class=\"instruction\">Grease pan, pre heat oven to 350<\/li>\n<li id=\"zlrecipe-instruction-2\" class=\"instruction\">Saut\u00e9 onion in olive on stovetop<\/li>\n<li id=\"zlrecipe-instruction-3\" class=\"instruction\">Once onions begin to soften, add garlic<\/li>\n<li id=\"zlrecipe-instruction-4\" class=\"instruction\">Saut\u00e9 1-2 minutes and add spinach<\/li>\n<li id=\"zlrecipe-instruction-5\" class=\"instruction\">Cook another 1-2 minutes until spinach starts to breakdown and then add mushrooms<\/li>\n<li id=\"zlrecipe-instruction-6\" class=\"instruction\">Stir in balsamic vinegar and cook for 3-5 minutes<\/li>\n<li id=\"zlrecipe-instruction-7\" class=\"instruction\">Whisk eggs and add milk in a large bowl<\/li>\n<li id=\"zlrecipe-instruction-8\" class=\"instruction\">Toss together thyme and bread<\/li>\n<li id=\"zlrecipe-instruction-9\" class=\"instruction\">In a 13&#215;9 pan add in bread and then vegetable mixture<\/li>\n<li id=\"zlrecipe-instruction-10\" class=\"instruction\">Pour in egg and milk mixture<\/li>\n<li id=\"zlrecipe-instruction-11\" class=\"instruction\">Top with goat cheese<\/li>\n<li id=\"zlrecipe-instruction-12\" class=\"instruction\">Cook for 50 minutes until bread is starting to brown<\/li>\n<li id=\"zlrecipe-instruction-13\" class=\"instruction\">Serve
